Blueberry-Cranberry Chicken Salad

PREP TIME: 30 Minutes
MAKES: 4 Servings


2 cups cubed cooked chicken breast (450 g)
1-½ cups DOLE® Blueberries (225 g)
1 cup dried cranberries (150 g)
½ cup chopped DOLE Celery (75 g)
½ cup diced orange or red bell pepper (75 g)
¼ cup thinly sliced green onions (40 g)
½ cup lemon lowfat yogurt (125 mL)
2 tablespoons mayonnaise (30 mL)
¼ teaspoon salt (1 mL)
1 package any 142g DOLE Salad Blend


Combine chicken, blueberries, cranberries, celery, bell pepper and green onions in large bowl.

Whisk together yogurt, mayonnaise and salt in small bowl. Gently fold into chicken-fruit mixture; chill.

Arrange salad blend on small plates and spoon chicken-fruit mixture over salad.
