Blueberry Compote

MAKES: 8 Servings


4 cup DOLE® Blueberries (can use frozen)
1 tablespoon sugar or honey (can use equivalent of non-caloric sweetener)
2 teaspoons cornstarch mixed in 1 tablespoon cold water
1 tablespoon lemon juice
1/2 teaspoon cinnamon
1/2 teaspoon vanilla (optional)


Place berries and sugar in saucepan, toss to combine. Add cornstarch and lemon juice.

Heat berries over medium heat, stirring, until just starting to boil and the juice thickens.

Add cinnamon and vanilla, stir well.

Serve warm or cold with cottage cheese, yogurt or oatmeal.
