Baby Spinach and Fruit-Stuffed Brie

TOTAL TIME: 16 Minutes
MAKES: 6 Servings
2 tablespoons strawberry preserves (30 mL)
½ teaspoon balsamic vinegar (2.5 mL)
1/8 teaspoon black pepper (0.5 mL)
½ cup DOLE® Baby Spinach, chopped (75 g)
2 teaspoons dried blueberries (10 mL)
1 wheel (about 8 oz. or 227 g) Brie cheese
2 tablespoons chopped walnuts (30 mL)
1 strawberry, hulled and sliced (optional)
Toasted baguette slices
Preheat oven to 350°F (175°C). Spoon strawberry preserves into a microwave-safe bowl. Microwave on HIGH for 30 seconds. Stir in balsamic vinegar, salt, pepper, chopped spinach and dried blueberries. Toss and stir to coat.
Slice Brie in half horizontally. Place bottom half of Brie on baking sheet. Mound spinach mixture on cut side of Brie. Replace with top half of Brie, rind side up; press down slightly. Top with walnut pieces.
Bake 6 to 8 minutes or until Brie is soft. Drizzle with additional heated preserves, if desired. Top with sliced strawberry, if desired. Serve warm with toasted baguette slices.
