Grilled Chicken Summer Salad
PREP TIME: 15 Minutes
MAKES: 3 Servings
1 cup bottled poppyseed dressing, divided (125 mL)
3 boneless chicken breast halves
1 pkg. (10 oz) DOLE® European or Romaine Salad Blend or other DOLE® salad variety (283 g)
14 oz. DOLE® Mandarin Oranges, drained (398 mL)
1 cup sliced strawberries (150 g)
¼ cup sliced toasted silvered almonds (optional) (40 g)
Remove 1/4 cup (60 mL) dressing for chicken.
Grill or broil chicken 5 to 10 minutes on each side or until chicken is no longer pink in center, brushing occasionally with 1/4 cup (60 mL) reserved dressing. Discard any remaining dressing. Cut chicken crosswise into 1/2-inch thick slices.
Line 3 individual plates with salad blend. Arrange chicken, mandarin oranges and strawberries over salad. Sprinkle almonds over salad, if desired. Serve with remaining 3/4 cup (180 mL) dressing.
