Banana Blueberry Muffins

MAKES: 6 Servings
2 extra-ripe, medium DOLE® Bananas, peeled
6 tablespoons margarine (90 mL)
6 tablespoons packed brown sugar (90 mL)
1-1/2 cups all-purpose flour (165 g)
½ teaspoon baking powder (2.5 mL)
½ teaspoon baking soda (2.5 mL)
½ teaspoon salt (2.5 mL)
½ teaspoon grated lemon peel (2.5 mL)
1 cup DOLE® Frozen Blueberries (150 g)
Puree bananas in blender (1 cup).
Beat margarine and sugar until light and fluffy. Mix in bananas and egg.
Combine flour, baking powder, soda, salt and lemon peel. Blend into mixture just until moistened. Fold in blueberries.
Line 6 large muffin cups with paper liners. Coat lightly with vegetable spray. Divide batter evenly.
Bake at 375°F (190°C), 20 to 25 minutes.
